
Nihon Izumi Brewery brew their sake in their basement where temperature can be controlled throughout the year, which allows the production of premium sake throughout the year.
We use ground-water of Nagara-river drawing from 100M of under-ground as brewing water and as we squeeze main fermentation mash by Kifune of traditional equipment taking a lot of time (3 days), we can brew sake which is little mixed flavor, mild and elegant.
This sake is brewed from Yamada-Nishiki (King of sake-brewing rice) and ground-water of the Nagara River. It is characterized by a rich & smooth taste and aromatic flavor like apples or bananas.
