
Fukumitsuya Sake Brewery
The history of Fukumitsuya Sake Brewery starts in the Edo period in 1625, we are the oldest sake brewery in Kanazawa city.
We make sake using only two ingredients; fine quality sake rice from our contract farmers and "Hyakunensui"; one-hundred-year-old water in English which begins as rain and snow falling at the foot of the Mt. Hakusan and have spent at least 100 years slowly filtering through deep underground. With these high quality ingredients, the highest level of craftsmanship and traditional family secret recipe, the brewery has enjoyed a reputation as one of the finest sake breweries in the area. Today, without leaving the tradition behind, we are evolving into a sake brewery of the future.
Morimoto Nigori Sparkling
Chef Morimoto took special care in selecting these premium sake produced in collaboration with the Fukumitusya Brewery which started in the Edo period in 1625. With the highest level of craftsmanship and traditional family secret recipes, the brewery has enjoyed a reputation as one of the finest sake breweries, and a prominent sake brewery in Kanazawa, Japan.
Tasting Notes: Brewed with 100% Fukunohana sake rice which is a one of our contract farming sake rice from Hyogo Prefecture. Several consist in this bottle; fresh and gentle bubbles, rich umami and sharpness in aftertaste.
Serving Recommendation: Salty snacks, can replace rum in cocktails such as a Pina colada
