"Tosatsuru"
Origin of the brand name: More than a thousand years ago, on
his way back to Kyoto after completing his duties as governor of Tosa, Noriyuki
Kino, on his way back to Kyoto, saw a flock of cranes dancing in the blue sea
and pine grove, and composed a poem full of longing for Tosa. The sake of
Tosatsuru is named after the kitcho crane in this poem.

The Traditions and Climate of the Brewery
Tosatsuru is located in Yasuda-cho, Aki-gun, in the eastern
part of Kochi Prefecture, overlooking Cape Muroto. Upstream of the Yasuda River
is Yanase, one of the three most beautiful cedar forests in Japan, and its rich
forests and abundant summer rainfall provide abundant, high-quality water,
which can be called the "lifeblood of sake brewing.
